{"id":2462,"date":"2019-10-21T15:59:43","date_gmt":"2019-10-21T15:59:43","guid":{"rendered":"https:\/\/mylifeinexcrement.wordpress.com\/?p=2462"},"modified":"2019-10-21T15:59:43","modified_gmt":"2019-10-21T15:59:43","slug":"collard-greens","status":"publish","type":"post","link":"https:\/\/mylifeinexcrement.com\/?p=2462","title":{"rendered":"Collard Greens"},"content":{"rendered":"<p>This is my recipe for collard greens.\u00a0 It was not passed down through the ages.\u00a0 I read a recipe in the ATK Vegetarian Cookbook and changed it significantly.<\/p>\n<ul>\n<li>6 lbs of fresh Collard Greeens<\/li>\n<li>4 tbsp Butter or Earth Balance (if being Vegan or Dairy-Free)<\/li>\n<li>4 cloves of Garlic, minced<\/li>\n<li>2 tsp Smoked Paprika<\/li>\n<li>1.5 tsp Chipotle Powder<\/li>\n<li>4 cups of Vegetable Stock<\/li>\n<li>1\/4 Apple Cider Vinegar<\/li>\n<li>Kosher Salt<\/li>\n<li>Pepper<\/li>\n<\/ul>\n<p>Instructions<\/p>\n<ol>\n<li>Destem the Collards.\u00a0 This will take some time, count on it being 45 minutes to an hour.\u00a0 Either fold the collard and cut the stem out, or <a href=\"https:\/\/www.amazon.com\/Chefn-LooseLeaf-Kitchen-Stripper-Stainless\/dp\/B078KKMTVB\/ref=sr_1_2?crid=1IIO31WMUCAJ2&amp;keywords=chef%27n+looseleaf+kale%2C+chard%2C+collard+greens+and+herb+stripper&amp;qid=1571667687&amp;sprefix=Chef%27n+loose%2Caps%2C570&amp;sr=8-2\">purchase a tool from Amazon<\/a>.\u00a0 I make this enough that I bought the tool.\u00a0 Once de-stemmed, cut into 2-inch squares as best you can.\u00a0 There&#8217;s no need to be extra militant over your square size.\u00a0 1 inch and 3 inch squares will happen.<\/li>\n<li>Melt the butter in a saute pan with a lid over medium-low heat (or if using an InstantPot, set it to saute&#8217; at the middle level).<\/li>\n<li>Once the butter is melted, put in the garlic, paprika, and chipotle powder.\u00a0 Stir it around for about 30 seconds.<\/li>\n<li>Working in hand sized batches, wilt the collards in the cooking vessel of choice.\u00a0 It will take 3-5 minutes to wilt a handful, I use tongs to keep things moving and prevent too much browning.\u00a0 You have to keep things moving, leaving it alone for 30 seconds may cause excess browning or burning.\u00a0 Season with pinches of salt as you go.<\/li>\n<li>Once all the greens are wilted, pour in the vegetable stock and scrape up any brown bits off the bottom.\u00a0 The stock should almost cover the greens.\u00a0 Stir in the vinegar.<\/li>\n<li>Simmer:\n<ol>\n<li>If on the stove top, cover and simmer over low heat for 3 hours.\u00a0 Stirring every 30 minutes or so.\u00a0 If you are losing too much liquid, add more stock or water as needed.<\/li>\n<li>If in the InstantPot, affix the lid, set it to Manual, High Pressure for 1 hour.\u00a0 Then do a quick release.\u00a0 If you let it natural release you risk over-cooking and getting mushy greens.\u00a0 If you need to do a natural release, you&#8217;ll need to reduce your cook time to like 40 minutes (I don&#8217;t know, I&#8217;m guessing &#8211;
