Like there were 8  ingredients which basically matched <a href=\"https:\/\/www.penzeys.com\/online-catalog\/italian-herb-mix\/c-24\/p-183\/pd-s\">Penzey&#8217;s Italian Herb Blend<\/a> and then some pointless things like onion powder and nutritional yeast so those just went.  No one misses them.  I did add bacon based on a recommendation from a friend.  Unlike the <a href=\"https:\/\/mylifeinexcrement.wordpress.com\/2020\/10\/24\/vegan-instant-pot-split-pea-soup\/\">Split-Pea<\/a> soup recipe, when I forgot the bacon one time, I heard about it.  <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Servings<\/strong>: Makes enough for us + lunch the next day, as long as there is some bread for dipping.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Time<\/strong>: About an hour, add 15 minutes for unruly children afoot.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>6 slices of bacon, cut into 1\/2 inch chunks<\/li><li>2 medium yellow onion, chopped<\/li><li>2 carrot, chopped<\/li><li>4 celery stalks, chopped<\/li><li>2 tablespoon minced garlic, I use the jar<\/li><li>Spice Pack<ul><li>2 tablespoon Italian Herb Blend<\/li><li>1 teaspoon Smoked Paprika<\/li><li>2 Bay Leaves<\/li><li>1\/2 tsp Red Pepper Flakes<\/li><\/ul><\/li><li>6 cups reconstituted vegetable stock concentrate<\/li><li>6 cups water<\/li><li>2 tablespoon\u00a0lemon juice<\/li><li>8\u00a0sun-dried tomato halves, finely chopped (in the bag, not oil or water packed)<\/li><li>1 tablespoon mellow white\u00a0miso\u00a0<\/li><li>6 cups red\u00a0potatoes, skins on, small dice<\/li><li>2, 15.5 oz. can\u00a0Cannellini beans, drained and rinsed<\/li><li>6 cups Tuscan kale, stemmed and torn into ~1 inch pieces<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Directions<\/h3>\n\n\n\n<ol class=\"wp-block-list\"><li>In the large Dutch oven (or similarly large stockpot), cook the bacon over medium heat for 2 minutes.  <\/li><li>Add the diced onion, carrots, and celery, saut\u00e9 for another 5 to 7 minutes.<\/li><li>Add the minced garlic, and spice pack; saut\u00e9 for 30 seconds to 1 minute.<\/li><li>Add the vegetable broth, water, lemon juice, sundried tomatoes, then increase the heat to a boil, stir well, then immediately lower to a low simmering boil.  <\/li><li>Add the potatoes. Cover and simmer until the potatoes are almost tender (~15 to 20 minutes). <\/li><li>Add beans and (by handfuls) the kale, stir to incorporate, simmer for 5 minutes.<\/li><li>Discard the bay leaf, check for saltiness needs, and eat it like you mean it.<\/li><\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">Remember to like and subscribe! Or not.
